Oooh--I have some advice to add to yours, for those folks who might be attempting some Wegman's-style pan-searing, which involves moving pans back and forth:
Gently and carefully lay the chicken breast (or other meatlike item) into the hot oil using tongs. Do not unceremoniously drop said item into the oil. If you do, you will receive fascinating arm burns in the shape of Australia.
